Our charcuterie is made from our own pasture-raised, organically-fed pork. Our current ready to eat range include garlic saucisson, smoked chorizo, coppa and guanciale. The preparation of charcuterie involves a range of techniques, including salting, curing, smoking, and fermenting. These techniques have been used for centuries as a way to preserve meat and enhance its flavour.
