About Us
Our story
We are Cass & Nick, first generation farmers who who are passionate about regenerative agriculture, ethically-raised livestock and food provenance. With access to family land just outside the village of Quin, we decided to pack up our lives in the subtropics and take the plunge of starting a farm of our own. We moved from Byron Bay, Australia to County Clare in December 2021. Together with our son Finn and daughter Isla, we run Lúnasa Farm which is certified organic through the Irish Organic Association.
About us
Cass grew up by Clovelly beach in Sydney's Eastern Suburbs. In 2013 she completed a livestock apprenticeship at Stone Barns Center for Food & Agriculture in New York State and has worked in organic agriculture since; managing various livestock operations and working as a market gardener selling seasonal produce at farmers markets and to chefs. Cass is a wholefoods cook with a keen interest in seasonality, nose-to-tail eating, fermentation and slow food. She is also a qualified nutritionist, having completed a degree in food science and nutrition at La Trobe University Melbourne..
Nick grew up in Quin and is an engineer by trade, but decided to switch career paths and follow his passion for regenerative agriculture, whole animal butchery and charcuterie. He ran a pasture-raised pig enterprise for five years with a friend in the Byron Bay hinterland of Australia, selling pork boxes direct to customers, and slowly learning the craft of artisan butchery under the skillful guidance of Hayters Hill Farm. Nick has also been to Italy twice to learn the craft of charcuterie.
Our farm
Our heritage breed pigs are reared outdoors year round, where they are free to root and forage in fresh paddocks every week. They are fed a certified-organic, soy free whole grain mix grown in County Tipperary. We ferment their grains in local whey which improves its digestibility and ensures that they are meeting their nutritional requirements. Our small herd of certified organic beef cattle are managed using holistic planned grazing and are 100% pasture-fed and finished.
Our butchery
We lease a small butchery in Clarecastle where we breakdown our own animals and make everything from scratch. We sell a range of nutrient-dense, regeneratively farmed meat and meat products that are free from gluten, artificial flavours, colours and preservatives, but packed full of flavour. We also stock seasonal products from other Irish producers, such as organic raw milk, pasture-raised eggs and fermented vegetables. We open the doors to our shop every Saturday between 9am-1pm, and offer local click and collect most days of the week (through prior arrangement). We are thrilled to have the opportunity to embark on this long-held dream and are delighted to be finally selling our ethically-raised meat through our online store.
